Additionally, growing number of high end bakery shops have created a fast growing segment catering to modern discerning consumer demanding best in class patisserie goods, and varied products from across the world. At AIBTM, we offer bakery training courses that fulfill a wide range of needs for industry and bakery businesses.

The Diploma in Patisserie & Artisan Bakery Craft has been developed in response to the demand for training in advanced practical skills, backed with scientific knowledge in all aspects of bakery technology and management. Trainees will qualify with practical skills, hands-on capabilities in making diverse products and international varieties of bakery goods.

Program has a practical focus with a strong theoretical, creative and business foundation. Hands-on practical work will be in world class teaching workshops with commercial style equipment and machinery. Faculty with long experience and international exposure will guide trainee in all round skill development.

Curriculum is designed in consultation with our international associates. Tests and assessment will be under guidance of AIB International School of Baking. Diploma will be awarded by AIB, internationally

Highlights of the Program

• 150 intensive practice sessions in well equipped workshop, under close guidance of experienced faculty.
• Hands-on training on over 250 patisserie and artisan products, including training on methods and development of recipes.
• Principles of ingredients, testing and quality evaluation, food hygiene and food laws, bakery entrepreneurship, setting up    bakery business, regulatory compliance.
• Periodic / Weekly assessment by faculty.
• Individual attention and mentoring from experienced faculty.
• Trainees will pass out with full capability and skill to independently make a large variety of patisserie and artisan products,    take up mid level employment or run their own enterprise.
• This course contains a high practical element using tools and equipment that can be injurious if handled inappropriately.    AIBTM training includes inculcating a level of awareness of safety standards and skill that does not compromise any health    and others.


• 1 year.
• Program includes 4 months internship with reputed organizations.

Entry requirements

• No formal qualifications are required. Basic knowledge of mathematics and language skills will be of advantage in theoretical study. Faculty will provide need based guidance to trainees in improving learning skills.

Assessment Methods:

• Continuous assessment will be done via observation of practical skills and bakery knowledge through a portfolio of evidence.

• Students master the fundamental, intermediate and advanced patisserie and artisan bakery products, practices and principles resulting in a comprehensive body of knowledge and skills, enabling them to operate successfully in this highly creative and demanding environment.

Additional qualifications

• AIBTM offers a variety of concurrent short programs in specific areas of bakery business. Special programs on language, personality development, Report writing and presentations are offered from time to time.

Non A/C 2 & 3 Seater Room: Rs. 1,20,000 per person, per year
A/C 2 & 3 Seater Room: Rs. 1,50,000 per person, per year

Accommodation for foreign Students

Non A/C 2 & 3 Seater Room: US$ 3,500 per person, per year
