Workshop on Wellness Bakery Products Special Focus on Blueberry

The bakery industry in India is sunrise sector and huge potential for growth, income and employment generation. It is the largest segment of the food processing sector. With rapid growth and changing eating habits of people, bakery products have gained popularity among masses. Bakery products are gaining a new dimension in modern times owing to their versatility in day to day life. Nowadays consumers are more aware to the healthy nutritive products or, eating items. Therefore there is a need to improve the quality of bakery products in respect of both nutrition and calorific value.

Blueberry is a Native American species of the genus Vaccinium and for century, it wre gathered from the forests and the bogs by Native Americans and consumed fresh and also preserved. Blueberries are sweet, juicy and most important, visible, when used in bakery products. Blueberry juice was used to treat coughs. Blueberries are processed in a number of different forms for availability year round and as ingredients for the food processing industry. Blueberry in the form of fresh blueberry, juice, dried form and dried powder are available in the market.

From the several researches it is found that blueberries are high in antioxidants like vitamin C & E. blueberry is also a rich source of dietary fibres, minerals, phenolics and low in fat and sodium. Thus, inclusion of blueberries in bakery product will be very beneficial for health. The benefits of blueberries recognized by health groups, when the blueberry at the top of bakery product beneficial in prevention of the risk of certain types of cancer.

Regard to above beneficial effect of blueberry, US high bush blueberry council and Assocom Institute of Bakery Technology and Management organized a workshop on wellness of bakery products based on blueberry at Coimbatore Tamilnadu. Main aim of the workshop was to increase awareness of the blueberry’s benefits in Indian market.

Main session in this workshop included Introduction of Healthy Bakery Products by Mr. K. Ravi. He had focused on healthy bakery items which are popular in India. After this session, overview of bakery industry and introduction of blueberry was dealt by Mr. Raj Kapoor, Managing Director, AIBTM & Consultant, US Highbush Blueberry Council. The workshop also included a live demo on healthy bakery products based on blueberry like blueberry muffins, blueberry pie, blueberry ginger biscotti, blueberry baked yogurt, blueberry mahalabia by Master Chef Abid Ali, AIBTM.
